DBH’s bangin’ muffins

I’m going to highlight some pals with their healthy escapades. To start, DBH shared her muffin recipe. Bone Apple Teeth

disclaimer: I don’t typically measure things I kinda like to throw things together so this is an estimate of what I use.. feel free to substitute ingredients and play around with the recipe.. enjoy!

2 cups of rolled oats (can use coconut, whole wheat or almond flour but oatmeal is the healthiest, I use Quaker Oats whole grain )

3-5 ripe bananas (mash them up)

1 tbsp of vanilla extract

1 1/2 tsp of baking soda

4 tbsp of agave (or any sweetener you have e.g: applesauce, honey or sugar.. more or less depending on how healthy/sweet you want it)

2 eggs ( if you are vegan, skip it or want it healthier use egg whites)

1 small container of Greek yogurt (optional)

Pinch of salt

Alittle bit of cinnamon

Flaxseed or chia seed ( optional but adds nutritional value.. I usually do 4 tbsp of chia seeds but be careful seeds are high in fiber and if you add too much it can have an adverse effect)

Protein powder (optional, but easy way to get your protein in)

Add toppings of your choice( chocolate chips, blueberries, strawberries.. blueberries is my favorite to add, adds sweetness mix into batter AFTER you blend everything together)

Throw it all in a blender and blend until oatmeal is not visible

Can either pour into a pound cake pan or muffin pan( I like muffin pan so I can have better portion control)

Bake @ 350 for 45-60 minutes (check with toothpick or fork.. if batter comes off on the toothpick it is not ready)

2 muffins is a serving size but 3 won’t kill you 🙂
